Tomato Soup Recipe with Fresh Tomatoes

Ingredients

  • 2 tablespoons olive oil
  • 1 onion,chopped
  • 2 cloves garlic
  • 1 can (28 ounces) whole peeled tomatoes
  • 1 cup chicken or vegetable broth
  • 1 teaspoon sugar (optional to balance the acidity of the tomatoes)
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional for a creamy texture)
  • Fresh basil leaves chopped (for garnish)
Instructions
  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic and saute until softened and fragrant about 5 minutes.
  2. Add the canned tomatoes (with their juices) to the pot. Use a wooden spoon to break up the tomatoes into smaller pieces.
  3. Pour in the chicken or vegetable broth. Add the sugar, salt and pepper to taste. Stir well to combine.
  4. Bring the soup to a simmer then reduce the heat to low. Let it simmer for about 15-20 minutes to allow the flavors to meld together.
  5. If you prefer a creamy tomato soup, you can use an immersion blender to blend the soup until smooth. Alternatively you can transfer the soup in batches to a blender and blend until smooth then return it to the pot.
  6. If using heavy cream stir it into the soup until well combined. Adjust the seasoning if needed.
  7. Serve the tomato soup hot garnished with chopped fresh basil leaves. You can also add a dollop of sour cream or a sprinkle of grated Parmesan cheese for extra flavor.
Notes

This recipe can be easily customized to suit your taste. Feel free to add herbs like thyme or oregano for extra flavor or adjust the amount of sugar and cream to your liking.
If you prefer a chunkier soup you can skip the blending step and leave some tomato pieces intact.
